White chocolate and pistachio blondies


 White chocolate and pistachio blondies



Ingredients:

Unsalted butter - 250g

Sugar - 250g

Eggs - 3

Plain flour - 175g

White chocolate chips - 250g

Chopped pistachios - 130g

Method:

  1. Melt the butter until it is smooth.
  2. Pre-heat the oven to 180.
  3. In a mixer whisk eggs and sugar together until it resembles mousse.
  4. Gradually add the melted butter while still whisking the egg mixture until combined.
  5. With a spatula, fold in the flour.
  6. Once all combined add the chocolate chips and pistachios and fold until it is all incorporated.
  7. line a baking dish with parchment and then pour the mixture into the tin.
  8. Bake for 30-35 minutes. It should be slightly golden but soft.

Notes:

If you want to decorate your blondies melt some white chocolate and pour into a piping bag. cut a tiny bit of the end of the piping bag and drizzle over the blondies. Before the chocolate goes hard sprinkle some chopped pistachio on top.
